· Marked day/night temperature variation:
High daytime temperatures in summer time (30 - 33 ºC) favors the production of sugar, color and aromas, and proper tannin ripeness.
Low night time temperatures (13 - 15 ºC) prevent the loss of the aforementioned, which leads to a greater concentration in the grapes.
